Key Lime Cupcakes With Cream Cheese Frosting

Ingredients:

*1 1/2 cups self rising flour
*2 cups unbleached all-purpose flour
*1 cup unsalted butter, room temp
*2 1/2 cups sugar
*4 large eggs
*5 tablespoons lime juice
*1 tablespoon lime peel, finely grated
*1 1/2 cups buttermilk


For Cream Cheese Frosting:
*16 ounces cream cheese, room temp
*3 cups powdered sugar
*1 cup unsalted butter, room temp
*1 teaspoon vanilla extract
*2 drops green food coloring

Directions:



1.) Preheat overn to 350. Line cupcake tins with paper.
2.) In a medium bowl, whisk both flours together. In a seperate large bowl, using an electric mixer on medium high speed, beat butter until smooth.
3.) Add sugar, beating until light and fluffy.
4.)Beat in one egg at a time.
5.) Add lime juice and lime peel.
6.)Beat in flour and buttermilk in three batches, alternating between the two.
7.) Pour the batter in the cupcake pans, filling each cup half way. Bake for 20-25 minutes or until a toothpick inserted in the middle comes out clean. Rotate pans halfway through the baking process.


For Cream Cheese Frosting:


1.) Beat the cream cheese, powdered sugar, butter, vanilla extract and food coloring in a medium bowl until smooth and creamy.
2.) Frost each cupcake.
