Garlic Chicken and Cinnamon Corn

Garlic Chicken

Ingredients:
4 boneless, skinless chicken thighs
1 cup Panko bread crumbs
1 cup Parmesan cheese
Dash garlic powder
Dash Italian Seasoning
Dash Paprika
1/4 cup olive oil
4 teaspoons minced garlic
2 tablespoons butter

Directions:
*Preheat oven to 425 degrees
*Lightly grease a a baking pan
*Warm 1/4 cup olive oil, 4 teaspoons minced garlic, 2 tablespoons butter until the butter is melted
* In a medium mixing bowl, combine the dry ingredients
*Salt and pepper the chicken and then dip in the olive oil mixture
*Coat in the bread crumb mixture
*Place chicken in the pan and bake for 30-35 minutes or until the juices are no longer pink.

Cinnamon Corn

Ingredients:
1/2 cup butter
1/4 cup sugar
1/4 cup flour
2/3 cup evaporated flour
2 cans corn, drained
1/4 cup sugar
1 teaspoon cinnamon

Directions
*Preheat oven to 350 degrees
*Lightly grease a casserole dish
*In a medium saucepan, heat butter and sugar until the butter is melted
*Mix in flour, remove from heat
*Whisk in evaporated milk, then mix in the corn
*Pour into prepared dish
*Mix the remaining sugar and cinnamon and sprinkle over the top
*Cook for 60 minutes or until a knife inserted into the center of the dish comes out clean
*Let stand for 5-10 minutes while sauce thickens

  1. Becky this sounds delish! If I am more of a white meat gal and cook mainly boneless chicken breasts, will the recipe still work with that?
