Honey BBQ Chicken and Broccoli with Rigatoni

Honey BBQ Chicken

Ingredients:
*4 skinless, boneless chicken thighs
* 1/4 cup butter
* 1 cup honey
* 1 teaspoon salt
* 2 tablespoon BBQ sauce
Directions:
* Preheat the oven to 350 degrees
* Place chicken in either a greased or foil lined pan
* Season the chicken with a little bit of garlic powder, pepper and seasonal.
* Place chicken in pan.
* In a small saucepan, combine butter, honey, BBQ sauce and salt; cook and stir over low heat until well blended and heated.
* Pour sauce over the pan.
* Cook for about 35-40 minutes until chicken is cooked all the way through
*This chicken held it's moisture really well and the flavor was amazing.  I would actually recommend making the sauce the night before and letting it marinate overnight in the sauce and then drizzling BBQ sauce over the top of the chicken while it's cooking in the oven.  Either way you decide to make it , it's a definite keeper in our household.  It's super easy to make and has some awesome flavor.


Broccoli with Rigatoni

Ingredients:
*8 tablespoons olive oil
* 2 tablespoons butter
* 4 cloves garlic
* 1 pound fresh broccoli
* 1 cup chicken broth
* 1 cup chopped basil
* 1 pound rigatoni
Directions:
* Cook pasta according to package directions.
* In a large skillet heat oil and butter.  Gently brown garlic, add broccoli and saute gently for 2 to 3 minutes.  Add broth, cover and simmer until broccoli is tender.
* Sprinkle with Italian seasoning, onion powder and squeeze a fresh lemon over top of the mixture.  Mix well.
* Toss the broccoli mixture with the basil and cooked pasta.
* Serve with grated Parmesan cheese.
*This pasta also had really a really nice, light flavor and Chris actually really like it with the sauce from the chicken over top of it, so Iwould recommend making it with the chicken placed over top of the pasta!
